HACCP Certified Hotels 0 % 10 % 20 % 30 % 40 % 1 3 7 11 16 22 32 2006 2007 2008 2009 2010 2011 2012 Safeguarding Food Safety At present, 75% of our hotels are certified under Hazard Analysis and Critical Control Points (HACCP) for food safety management system implementation and the focus is to ensure all our hotels will be certified. During the past two years, we reviewed all aspects of our catering operation, including our food supply, storage, handling, kitchen cleanliness, serving practices, training, audit and documentation and developed a harmonised Food Safety Management System Manual to be implemented in all Rotana hotels to ensure consistent food safety standards in the countries of operation. As part of Rotana Suppliers Evaluation Programme, during the last two years, we have audited more than 150 food suppliers and have stopped dealing with non-compliant suppliers. Currently we purchase from HACCP approved suppliers for the majority of our fresh produce. In 2012, 92% of our hotels food handlers were trained on the basic level of food safety, beside the intermediate and advanced food safety programme and HACCP trainings. Rotana has also signed a corporate agreement with Bureau Veritas to conduct compliance audits against HACCP, ISO 14001, OHSAS 18001 and Environment, Health & Safety Management system, EHSMS. Guest Health, Safety & Security Ensuring the Health, safety and security of our guests is of prime importance to us; therefore we have deployed health & safety, security, food safety and emergency management systems in line with local and international guidelines and standards.
